Last-minute New Year's Eve dinner recipes

Hosting a last-minute New Year's dinner? Here's a perfect blend of 3-course meal plan, both easy and elegant to lighten up your evening and welcome the new year on a delicious note.



Celebratory Martini Jelly

Ingredients:

  • Unflavoured gelatin

  • Cold white grape juice - 2 cups

  • Sugar - 2 tbs

  • Martini

  • Fresh strawberries

Direction:

  • Sprinkle gelatin over cold grape juice and leave it to settle

  • In a saucepan, heat on low flame until gelatin is dissolved

  • Cool to room temperature

  • Pour the martini into the gelatin mixture in a separate bowl

  • Pour the mixture into martini glasses

  • Add a strawberry to each glass

  • Refrigerate for about an hour before serving.


Appetising Mini Cheese Balls

Ingredients:

  • Cream cheese - 8 ounces

  • Parmesan cheese - 2 cups

  • Choice of veggies

  • Paprika

Directions:

  • Mix the cheeses in a large bowl

  • Shape them into balls

  • Add choice of cut vegetables and paprika

  • Refrigerate overnight

  • Heat for a minute or two in the microwave before serving


Fancy the lamb chops?

Ingredients:

  • Dried basil, majoram, and thyme - 1 tsp each

  • Salt - 1/2 tsp

  • Lamb breast chops - 3 ounces

  • potatoes for sides (optional)

Direction:

  • Mix herbs with salt and flavour the lamb chops

  • Refrigerate for an hour

  • Broil the meat until it reaches the desired doneness

  • Serve with potato wedges


The show-stopper snowballs

Ingredients:

  • Softened unsalted butter

  • Confectioners sugar

  • Almond extract

  • 1 tsp salt

  • Unsalted cashews

  • Macadamia nuts

  • Pecan halves

Direction:

  • Pre-heat oven to 375 degrees

  • Mix cream butter and confectioners salt to a fluffy mixture

  • Add nuts to the mix

  • Shape the mixture into balls

  • Bake for 8 to 10 minutes

  • Cool for 10 minutes

  • The snowballs are ready to be served.
