How to perfect the traditional Christmas cake
Christmas is not without traditions and certainly not without the traditional iced plum cake. A royal item to include in your dinner party to truly make an impression on your guests. The challenge is rising up to the standards of its perfection and this simplified recipe will show you just that.

Ingredients:
250 grams flour
250 grams softened butter
250 grams powdered sugar
4 eggs 1.5 tsp baking powder
1/2 cup citrus peels & 1/2 cup prunes
1/2 cup raisins, soaked in orange juice
1 tbsp spice mix
For the royal icing -
2 egg whites
2 teaspoons fresh lemon juice
3 cups (330 grams) icing sugar
30 ml water
1/2 tsp gelatin
1/2 tsp golden syrup Bloom gelatin in water.
Method:
Mix butter with powdered sugar in a bowl.
Add eggs one-by-one to the mixture.
Mix the flour and baking soda in another bowl. Add some raisins to the mix.
Add spice mix too into the batter and stir well.
Grease the cake mould and slowly pour the batter into it.
Bake for 40-45 minutes.
Roll the colored balls into disks and carve them in tiny tree shapes.
The Fondant Frosting -
Whisk whites into a bowl and whip them with icing sugar.
Add lemon juice to the mixture while continuing to whisk.
Leave it to settle.
Once the cake is cooled, add the frosting evenly and decorate according to your choice.
The perfection is ready to be served.
